Grandma Worm’s Pumpkin Chocolate Chip Muffins
Every semester, as it gets closer to finals week, I find myself waking up later and later. I often end up sacrificing breakfast to make it to class on time. My roommate gave me this recipe for pumpkin chocolate chip muffins that are super easy to make and are perfect for grabbing to take with you to class! These muffins are perfect for fall and the holidays!
Prep time: 15 minutes
Cook time: 20 minutes
Yield: 24 standard size muffins
Ingredients:
4 eggs
2 cups sugar
1 can (16 oz) pumpkin
1 ½ cups vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups (12 oz) semisweet chocolate chips
Directions:
Preheat oven to 400F
In a large mixing bowl, beat eggs, sugar, pumpkin, and oil until smooth.
Combine flour, baking soda, baking powder, cinnamon, and salt.
Add pumpkin mixture to dry ingredients and mix well.
Fold in chocolate chips.
Grease or put papers in muffin pan.
Fill muffin cups 3/4ths full.
Bake at 400F for 16-20 minutes or until done.
