Yummy Cream Cheese Mints
Growing up, I used to love making cream cheese mints with my grandma. They are an easy and light treat to make, being great for after a meal. The recipe even won a 1st place blue ribbon at the Kansas State Fair in the Girl Scout House! I’m also very excited to make cream cheese mints for after dinner at my upcoming wedding reception. While my grandma had a much more secretive recipe, the one listed below from All Recipes is somewhat similar. Hope you enjoy

Recipe
Ingredients:
1 (3oz.) package cream cheese, softened
1 Tbsp. butter softened
3 cups confectioners’ sugar
2 drops peppermint oil
Food coloring
Directions:
Prep: 30 min
In a large bowl, combine cream cheese, butter, and confectioner’s sugar.
Mix in peppermint oil.
Color as desired with food coloring paste or leave white.
Roll mixture into small balls, and place on waxed paper.
Flatten with a fork dipped in confectioners’ sugar.
Let dry for about 2 hours on waxed paper, then freeze or refrigerate.
