Sunday Morning Waffles

In my house, Belgian waffles are a staple on Sunday mornings, and if for some reason we make waffles on anything but a Sunday, it just doesn’t feel right. So here is my family’s time honored recipe for Sunday Morning Belgian Waffles:

2 eggs

  • 2 cups flour

  • ½ cup vegetable oil or ½ cup (1 stick) margarine or butter, melted

  • 1 ¾ cups milk

  • 1 tablespoon table sugar or brown sugar.

  • 4 teaspoons baking powder

  • ¼ teaspoon salt

Heat waffle baker. Beat eggs with wire whisk or hand beater in medium bowl until fluffy. Beat in remaining ingredients until smooth. Pour about 2/3 cup batter onto center of hot waffle baker. Bake about 5 minutes or until ready light comes on. Remove waffle carefully.

Makes about 4 cups batter.
