Moving to college left me missing so many things from home: my family, my dog, my bed, and, of courses, my mom’s cooking. Now, the dining hall makes many of the dishes that my mom cooks at home, but they just aren’t the same! Here’s a couple of recipes that are microwave, budget, and college student friendly!
Breakfast in a Jar
2 Small Canning Jars
4 Slices of Deli Ham, Chopped
2 Cheese Sticks, Diced (I like Sargento Pepper Jack)
½ Cup Spinach
2 eggs, beaten
Spray the canning jars with the cooking spray. Split the ham in half and layer it in each jar. Split spinach between each jar. Add an egg to each. Put a cheese stick into each jar. Throw them in the microwave for one minute. Check to see if the egg is set up. If not, go another minute. Serve from jar, or slide onto plate.
Microwave Mac and Cheese
½ Cup Macaroni
½ Cup Chicken Broth (You can use water, but my mom always used chicken broth and it’s amazing!)
¼ to ½ Cup Shredded Cheese (Depending on how cheesy you like it)
Combine the macaroni and chicken broth in a microwave safe bowl. Microwave on high for two minutes, while checking to make sure the broth doesn’t boil over. Use oven mitts to take the bowl out of the microwave, because it will be very hot (lesson learned), and stir. Continue microwaving and stirring every two minutes until the pasta is soft and cooked through. This will take about 4-8 minutes. If the pasta absorbs all the broth before it is done just add some more. Stir in the cheese and heat until it is melted.
P.S. Make a whole batch for your friends by using 1 ½ cups macaroni, 1 can of chicken broth, and 1 cup shredded cheese!
Homemade Ice Cream
1 Cup Half and Half
½ Cup Salt
2 Tablespoons Sugar
½ Teaspoon Vanilla Extract
1 Pint Size Ziploc Bag
1 Quart Size Ziploc Bag
Combine half and half, sugar, and vanilla in the pint size Ziploc bag. Seal it tightly so it won’t leak. Fill the gallon size Ziploc halfway with ice and then sprinkle the salt over the cubes. Put the pint size bag inside the gallon size bag and seal it. Shake the bag for 5-10 minutes until it begins to harden. Remove the small Ziploc and add in any mixins that you want! (Strawberries are my favorite)
Hopefully these recipes fill your tummy, and make you feel a little more at home.
